RUTABAGA FRIES











Ingredients:

1 to 2 large rutabagas
Olive oil
Real Salt
Aunt Cora’s Seasoning


Preheat oven to 400 degrees
Peel and cut rutabaga into strip (French fry style) the thinner the crispier J
Using a cookie sheet spread the fries onto pan, drizzle with EVOO and salt and heavily cover with aunt cora’s seasoning.

Bake for minimum of 1 hour flipping with spatula ½ way through.  Make sure you sprinkle more aunt cora’s on the flip side and good till good an crispy.

 

Roasted Red Peppers


Ingredients:
6 to 12 Large Peppers can use red, yellow, orange
Large Roasting Pan
Olive Oil
Fresh Garlic
Real Salt (sea salt)
Fresh Parsley

Preheat oven to 400 degrees
Place whole peppers into roasting pan and cook for 1 hour.  Using tongs rotate peppers every 20 mins make sure the skins char and even turn black.

Once peppers are fully cooked, carefully place them into a bowl and or brown paper bag sealing to let the steam continue to cook the peppers.  After they are cool tear open the bag and carefully pull the skins off.  You may need to use the faucet to help remove the skins and seeds.
Place the meat (inside fleshy part into a bowl) drain the excess water.

Chop fresh garlic and fresh parsley
Drizzle EVOO and add salt to taste.

Keep refrigerated for up to 1 week in tupperwear container.

Use as a garnish to meals or simply eat as a side dish! J
